The purchase of a WHOLE HOG is divided into three separate transactions:
The Whole Hog option will be calculated at $4.00/lb. using the hanging weight. The estimated all-in cost of a Whole Hog, including processing, is estimated to be between $900-$1500 and will yield approximately ±160 lbs. of packaged freezer pork.
After the balance is paid, an email will be sent with the processors contact information. You will relay your custom cutting instructions to the processor and they will walk you through all the options to make it as easy as possible.
Hogs are custom processed based on the purchaser’s personal preference. Total processing costs depend upon the options selected, which may include smoking/curing, various sausage seasonings, linking or patty-forming, white butcher paper or vacuum-seal packaging, etc. Because of this variability, the buyer pays the processor directly, separate from the farm. An average cost to the processor is estimated to be around $250.Butchering fees are paid separately and directly to the butcher.
It typically takes about a week for the butcher to process the fresh cuts and about 3-4 weeks for the smoked and cured items to be completed. Most people wait for the entire processing to be complete before pickup, to avoid extra trips.
The buyer is responsible for picking up the finished product at the processor and paying all butchering fees.
We use Bittner's Meat Co. (Eureka Locker) in Eureka, Illinois for our processing. They are a certified organic butcher. They offer MSG-free seasonings and added nitrate-free curing.
The processor will notify you once your order is completed and ready for pick up at the processor. All meat will be packaged and frozen. You will need to bring your own coolers, boxes, totes, laundry baskets, etc. to haul your items. The processor does not provide boxes.
